Ingredients

  • 1 pound ground beef

  • 1 tablespoon Shaoxing rice wine

  • 3 large russet potatoes

  • 1/2 cup soy sauce

  • 3 cups water

Directions

  • Wash, peel, and dice the potatoes into 1/2 inch cubes.
  • Heat wok on high. Add 1 tablespoon olive oil and spread. Add ground beef, breakup, and stir fry until almost cooked through. Add Shaoxing rice wine and mix.
  • Add diced potatoes and mix. Add the soy sauce and water. Soy sauce water should just cover the potatoes and beef. Mix until evenly coated and bring to a boil.
  • Lower your heat to allow mixture to continue to bubble (medium or low heat). Let liquid cook down. When liquid is mostly absorbed by the potatoes and potatoes are tender (approximately 15-20 minutes). Scoop out and serve.

Notes

  • You can also substitute ground pork in place of the ground beef.
