Dry-fried green beans (aka Si Ji Dou) are a delicious Sichuanese way of cooking green beans. The green beans are cooked until slightly wrinkled and then stir fried with pickled mustard greens and chilis. The pickled mustard greens add a slightly sweet and sour, but savory crunchy texture to the green beans. The chilis add a little spiciness.
