Chinese fried chicken wings was one of my favorite dishes growing up! My mother would serve up these delicious golden chicken wings and my siblings and I would gobble them up quickly. Today my kids love them too. These chicken wings are easy to make with just some light marinating and then frying!

Ingredients
30 wingettes/drummettes (or 15 whole chicken wings)
1/2 tablespoon salt
1/2 tablespoon black pepper
3 tablespoons Shaoxing rice wine
4 tablespoons soy sauce
1 tablespoon sesame oil
1/2 teaspoon fish sauce
2 large eggs (whites only)
4 tablespoons flour
4 cups vegetable oil & meat thermometer
Directions
- Prepare chicken wings by removing tips and cutting apart the wingette (the midsection) from the drumette. Place wingettes and drumettes in a large bowl.
- Add salt, pepper, Shaoxing rice wine, soy sauce, sesame oil, and fish sauce to the chicken. Mix well until all are evenly coated. Cover and place in refrigerator to marinate for 2 hours.
- When you are ready to fry the chicken, add only the egg white of the large eggs to the chicken. Sift in the flour. Mix well until chicken is evenly coated.
- Add the vegetable oil to a medium sized pot and turn heat to high. Bring oil temperature up to 320 degrees Fahrenheit. Place chicken wings in oil so they are not touching each other. Fry a batch at a time until the wingettes/drummettes float up (approximately 3-4 minutes). Remove from oil and set aside to cool until all chicken is fried.
- Fry the chicken again in the same oil at 360 degrees Fahrenheit until their internal temperature reaches 165 degrees Fahrenheit (or approximately 2 minutes). Remove from oil and serve!
