Dry-Fried Green Beans (aka Si Ji Dou)

Dry-fried green beans (aka Si Ji Dou) are a delicious Sichuanese way of cooking green beans. The green beans are cooked until slightly wrinkled and then stir fried with pickled mustard greens and chilis. The pickled mustard greens add a slightly sweet and sour, but savory crunchy texture to the green beans. The chilis add a little spiciness.

Dry fried green beans is a deliciously Sichuanese sweet, savory, and spicy way to cook green beans.

Ingredients

  • 1 pound 1 1 pound of fresh green beans

  • 2 tablespoons 2 1 tablespoon olive oil

  • 1 tablespoon 1 1 tablespoon minced garlic

  • 2 whole 2 2 dried chili peppers

  • 1/4 pound 1/4 1/4 pound of ground pork

  • 1/4 cup 1/4 1 cup of minced pickled mustard greens (Sui Mi Ya Cai)

  • 1 tablespoon 1 2 tablespoons Shaoxing rice wine

  • 1 tablespoon 1 1 tablespoon soy sauce

  • 1 teaspoon 1 1 tablespoon sugar

Directions

  • Wash and cut off ends of green beans.
  • Heat wok on medium-high and add 1 tablespoon olive oil. Add the green beans and stir fry until you see sides of the green beans starting to brown and develop wrinkles. Plate and set aside.
  • Reheat wok on medium-high and add 1 tablespoon olive oil. Add minced garlic and whole chilis to bring out aroma. For more spiciness, chop the whole chilis before adding.
  • Add ground pork to work and stir fry until cooked.
  • Add minced pickled mustard greens and stir fry with pork until well blended.
  • Add cooked green beans back to wok and mix with pork mustard green mixture. Add Shaoxing rice wine, soy sauce, and sugar and mix everything together well. Plate everything and serve.
