  • For Chicken Marination:
  • 2 pounds of chicken thighs

  • 2 slices of ginger cut into matchsticks

  • 3 tablespoons cornstarch

  • 3 tablespoons water

  • 3 tablespoons sesame oil

  • For Stir Frying:
  • 1 green bell pepper

  • 4 tablespoons olive oil

  • 1/2 large Spanish onion

  • 3 stalks of celery

  • 1 tablespoon ground black pepper

  • 3 tablespoons cornstarch

  • 6 tablespoons oyster sauce

  • 3 tablespoons soy sauce

  • 3 tablespoons dark soy sauce

  • 6 tablespoons water

Directions

  • Cut chicken thighs into 1/2 inch cubes and place in a bowl. Add ginger, cornstarch, sesame oil, and water. Mix well and set aside to marinate.
  • Wash and prepare vegetables: Cut bell pepper in half and remove center stem and seeds. Chop into 1 inch square pieces. Peel and cut onion into 1 inch square pieces. Cut off ends of celery and chop celery into 1/2 inch wide pieces.
  • Prepare stir fry sauce: Mix ground pepper, cornstarch, oyster sauce, soy sauce, dark soy sauce, and water in a bowl.
  • Add olive oil to wok and heat on high. Spread olive oil around wok. Once oil is heated, add chicken and stir fry until chicken looks cooked on all surfaces.
