West Lake Beef Chowder Soup is an easy Sichuan soup to make at home!
Ingredients
1 pint chicken stock
8 cups water
1/2 pound of ground beef
1 package of firm tofu
1/4 cup of cilantro leaves
1/2 teaspoon white pepper
1/2 teaspoon salt
Directions
Boil chicken stock and water in pot.
Slowly add pieces of ground beef with chopsticks to boiling soup. Let mixture boil for 10 minutes. Skim the top of the soup for any beef fat or blood that floats to the top until you achieve a clear soup.
Cut tofu into 1/2 inch cubes and add to boiling soup. Let boil for another 5 minutes.
Add cilantro leaves, white pepper, and salt to taste and just before serving.
