Scrambled Eggs with Chives

Scrambled eggs with chives is a healthy vegetable option to stir fry with eggs. Chives pair well with eggs and are the leaves of garlic. The chives add a flavor to the eggs that is a cross between scallions and garlic. An alternative to green chives is yellow chives, which are a little milder and sweeter. Yellow chives are grown without sunlight unlike green chives, so you can also give that option a try if your Asian grocer is carrying them.

Eggs with chives a very simple healthy authentic dish.

Ingredients

  • 10 stalks of green chives

  • 8 large eggs

  • 1 teaspoon salt

  • 1 tablespoon olive oil

Directions

  • Wash and chop off ends. Chop green chives into 2 inch sections.
  • Crack eggs into a bowl and beat until well mixed. Add 1 teaspoon salt. Add chopped green chives and mix together.
  • Heat non-stick pan on medium-high heat. Add olive oil to pan and spread. Add egg mixture. Gently turn eggs every 15 seconds to scramble the eggs. Keep turning eggs until eggs are lightly browned and green chives soften.
  • Add more salt to taste. Scoop onto plate and serve.

Notes

  • You can substitute green chives with yellow chives as an alternative.
