One-pot Hainan Chicken Rice

Hainanese chicken is healthy, yet pungent with scallions, garlic and ginger flavor.

Ingredients

  • 2 cups white rice

  • 3 cups chicken stock

  • 8 chicken drumsticks

  • 1/4 cup kosher salt

  • 2 tablespoons sesame oil

  • 3 slices of ginger

  • 3 pandan leaves

  • 3 cloves of whole garlic

  • 1 teaspoon black pepper

  • 1 scallion chopped

  • 2 tablespoons olive oil

  • Garlic soy sauce for dipping
  • 3 tablespoons olive oil

  • 3 cloves garlic chopped

  • 1 tablespoon ginger chopped

  • 1 tablespoon oyster sauce

  • 4 tablespoons soy sauce

Directions

  • Rub chicken drumsticks with half of kosher salt. Rinse chicken drumsticks, rub with sesame oil and re-sprinkle with remaining kosher salt and black pepper. Set aside to marinate.
  • Wash and drain rice. Put in ceramic pot. Add chicken stock.
  • Add ginger slices, whole garlic, and pandan leaves on top of rice. Place chicken on top.
  • Boil rice on high heat until water bubbles. Cover and turn temperature to low/simmer for 15 minutes. Do not remove cover to keep steam trapped inside.
  • Turn off heat after 15 minutes and continue to let stand for another 15 minutes covered.
  • While rice is sitting, prepare soy dipping sauce.
  • Heat olive oil in pot. Add ginger and garlic to oil to fry. Turn off heat after it browns slightly.
  • Mix oyster sauce, soy sauce with ginger garlic oil in a small bowl. Set aside.
  • After rice is done, remove cover, remove pandan leaves and garlic from top of rice. Set the cooked garlic to the side. Fluff the rice with a spoon or chopsticks.
  • Plate the rice, drizzle some sauce on top. Place drumsticks on plate. Chopped the cooked whole garlic and mix with olive oil and drizzle and chopped raw scallions. Drizzle on top of chicken legs and serve!
