Spicy tomato shrimp is an easy and common Chinese home stir fry dish.

Ingredients

  • 1 pound of medium sized shrimp

  • 1 tablespoon olive oil

  • 4 tablespoons ketchup

  • 2 tablespoons chili garlic sauce

  • 2 stalks of scallions

Directions

  • Wash scallions and cut off ends. Chop into 2 inch sections. Set aside.
  • Peel off shell and remove heads of the shrimp. Using knife, score length-wise the back side of each shrimp to de-vein. Sprinkle salt on shrimp and wash with cold water and drain.
  • Heat wok on medium-high heat with olive oil. Add shrimp and stir fry until almost cooked through.
  • Add ketchup and chili garlic sauce and stir fry until shrimp evenly covered. Add scallions and stir fry for another minute. Scoop onto plate and serve!

Notes

  • For a non-spicy option, just replace the chili garlic sauce with more ketchup and minced garlic.
