Stir fried tomato and egg is the quintessential Chinese home cooked dish. It is very simple, nutritious and delicious.

3 vine tomatoes
6 eggs
1 tablespoon 1 1 tablespoon water
3 tablespoons 3 2 tablespoons of olive oil
6 cloves of garlic minced
1 teaspoon 1 1 tablespoon of sugar
Salt to taste
Directions
- Wash and remove stem and stem area of tomatoes. Cut tomatoes into 1/8 size chunks.
- Crack eggs into a small bowl and beat with 1 tablespoon of water.
- Put 2 tablespoons of olive oil into non-stick pan and put heat on high. Add beaten eggs when you feel heat rising from pan of oil.
- As egg cooks, use spatula to move the cooked parts of the egg to the center of the pan, allowing the uncooked eggs to drain to the bottom of the pan. Keep doing this until all the eggs appear to be cooked (scrambled) and lightly browned and then remove from pan.
- Add 1 tablespoon of oil to pan again and this time, add the minced garlic. Once you can smell some of the garlic aroma, add the cut tomatoes and stir fry until tomatoes are softened. Add sugar and mix well.
- Add the cooked eggs back into pan and gently mix eggs and tomatoes together. Salt to taste and stir fry. Remove from pan and serve immediately.
