Yu Choy (aka Choy Sum or You Cai) with Minced Garlic

Yu Choy (aka Choy Sum in Cantonese or You Cai in Mandarin) is a common Chinese leafy green vegetable. It’s not bitter nor sweet. The flavor is a cross between broccoli and kale. It is similar to Chinese broccoli (aka Gai Lan in Cantonese or Jie Lan in Mandarin), but with skinnier stems, slightly sweeter, and can have small yellow flowers. The most common way to cook the vegetable is to saute it with garlic. It is also often blanched and added to soup noodles.

Ingredients

  • 1 pound of Yu Choy

  • 6 minced garlic cloves

  • 2 tablespoons olive oil

  • 1 tablespoon soy sauce

Directions

  • Wash the yu choy and cut off the ends of the stems.
  • Heat wok on high and add olive oil. Coat olive oil around wok to heat the oil. Add minced garlic and stir fry for one minute to release the garlic aroma.
  • Add the yu choy and soy sauce. Saute in the garlic oil until evenly coated. Add 2 tablespoons of water and cover to steam for 2 minutes.
  • Uncover and stir fry for another minute, scoop onto plate and serve.
